Daily Use
Grind Size Settings
The size of the coffee grind affects the rate water flows through the ground coffee during extraction and the flavor of the espresso. If the grind size is too fine, water flows too slowly during extraction, the coffee will be over-extracted, and the espresso will taste bitter. If the grind size is too coarse, water flows too fast during extraction, the coffee will be under-extracted, and the espresso will taste watery.
There are numbers (0-30) on the grind size selector. The smaller the number, the finer the grind size. The larger the number, the coarser the grind size. Rotate the bean hopper to adjust the grind size. It is recommended to start at number 15 and adjust according to the flavor you like.
Start to Grind
Make sure the hopper is completely locked into its position and fill it with fresh coffee beans.
- Choose either the 1 Cup or 2 Cup filter basket and insert it into the portafilter.
- Place the empty portafilter into the Grinding Cradle.
- Short-press the GRIND AMOUNT Button to select the grind amount. Press 1 time to select the amount for 1 cup, press twice to select the amount for 2 cups, and press 3 times to select the amount manually.
- Short-press the POWER / GRIND Button to start grinding.

- For the amount by manual control, press the POWER / GRIND Button to stop grinding when the amount reaches your need. If the POWER / GRIND Button is not pressed to stop grinding, it will automatically stop after 60 seconds.
To protect the grind system, the grinder features overuse protection. That makes the grind function pause working when the grinder has been grinding for 3 minutes continuously and without a cumulative 6-minute break. When the overuse protection takes over,
- The GRIND AMOUNT Button turns off
- The GRIND AMOUNT Button flashes red if you press the button
- The machine only beeps if you press the GRIND AMOUNT Button
Tamping the Ground Coffee
- Once you have enough ground coffee in your portafilter, withdraw it from the Grinding Cradle.
- Tap the portafilter lightly on the desk or countertop to shake down the ground coffee hill and distribute the coffee evenly in the basket.
- Tamp down the ground coffee firmly with 30-40Lbs of pressure.
- As a measure of the tamped coffee amount, the top edge of the tamper should be level with the top edge of the filter basket AFTER tamping.
- Use your finger or a small brush to remove excess ground coffee from the edge of the filter basket to ensure a full seal for extraction.
Heat the Group Head
Now you have a portafilter with tamped coffee, but before placing it into the Group Head, run a short flow of hot water through the extraction system by EXTRACTION Button. This will make the extraction more efficient and consistent.
Placing the Portafilter
Place the portafilter under the Group Head with the handle aligned with the INSERT sign. Raise the portafilter straight to fit into the Group Head and rotate the handle to the right until resistance is felt. The handle should be perpendicular to the control panel when the portafilter is in position. Extra force may be needed to turn the portafilter in the Group Head for the first few uses.

- Pressing the EXTRACTION Button during extraction will stop the process immediately.
Extracting Pressure Gauge
Extracting pressure is critical for a perfect cup of espresso. The espresso machine is equipped with a high-accuracy pressure gauge to monitor the extraction process. It will help you to understand the extraction status and make adjustments fothe r future accordingly. To provide more extraction results, the machine allows two different pressurized pre-infusion methods; the pressure differs for different infusion stages of each method. However, for the majority of the time, the pressure should be within the Ideal Espresso Zone.
Ideal Espresso Zone
- That is when the gauge neneedlepositioned anywhere within the blue zone, indicating the espresso is being extracted at the correct pressure.
Under Extracted Zone
That is when the gauge needle, positioned anywhere to the left side of the blue zone, indicates the espresso is being extracted with insufficient pressure. This happens when the water flows too fast through the ground coffee, making the machine unable to increase the pressure to the ideal pressure. The espresso is watery in appearance and lacks crema and flavor. Possible causes for under extraction can be the grind size being too coarse, insufficient coffee amount, or tamping without enough pressure.
Over-ExtractedZone
That is when the gauge needle, positioned anywhere to the right side of the blue zone, indicates the espresso is being extracted with too much pressure. This happens when the water flows too slowly through the ground coffee, causing the machine to generate too much pressure over the ideal pressure. The espresso is dark in appearance, bitter in taste, and has uneven crema. Possible causes for over extraction can be the grind size being too fine, excessive coffee amount, or tamping with too much pressure.
Optional Infusion Methods
To provide more extraction results, the machine supports two different pressurized pre-infusion methods.
- Gentle Infusion
After a certain amount of water is infused into the tamped coffee grinds at the beginning, water infusion pauses for 3 seconds, letting coffee soak before a steady water flow and pressure. Gentle Pre-infusion makes a balanced tasting espresso. - Distinct Infusion
After a certain amount of water is infused into the tamped coffee grinds at the beginning, water infusion pauses for 5 seconds, letting coffee soak before a steady water flow and pressure. Distinct Pre-infusion makes sharp sharp-tasting espresso. - Pre-infusion Method Programming
- Press and hold the EXTRACTION Button for 2 seconds until the GRIND AMOUNT and EXTRACTION AMOUNT buttons start to shine slowly.
- Press the GRIND AMOUNT Button to select the Infusion method.

- Within 15 seconds, press the POWER / GRIND Button to not save and exit the program. Button lights flash in red to show that settings have not been saved.
Extraction Temperature Programming
The machine allows you to adjust the extraction water temperature to match different types of coffee beans and make the espresso suit your taste. There are three temperature options, 192.2℉(89°C), 197.6℉(92°C) and 203℉(95°C), the default temperature is 197.6℉(92°C). High temperature increases bitterness and decreases acidity; low temperature decreases bitterness and increases acidity. To adjust the extraction temperature

Always be careful while using the Steam or Hot Water function. Do not touch the metal components (especially the steam wand) during use or point the steam wand towards body parts, as it’s extremely hot. Use the silicone handle to adjust the angle of the steam wand if needed.
Milk Frothing
- The STEAM / HOT WATER indicator must illuminate to release steam.
- Point the steam wand towards the drip tray or into a milk jug.
- Rotate the Steam/Hot Water Dial to the ‘STEAM’ position. The STEAM / HOT WATER indicator shines slowly. Some water may purge from the steam wand before steady steam is released consistently.
- Before inserting the steam wand into milk, rotate the Steam/Hot Water Dial to the ‘STANDBY’ position, which will pause the steaming and avoid splashing during insertion.
- Insert the steam wand tip 2/5”-4/5”(1-2cm) below the milk surface, close to the 3 o’clock (right side) or 9 o’clock (left side) position, and keep a 1/2” distance from the pitcher wall.
- Then quickly rotate the Steam/Hot Water Dial to the ‘STEAM’ position. Time gap between ‘STANDBY’ position (pause steam) and ‘STEAM’ position again should be minimized to no more than 8 seconds.

Coffee Beans Selection
For the best espresso result, we recommend using freshly roasted coffee beans. Measurements are 0-20 days from the Date of Roast. Buy coffee beans locally in small batches to reduce unnecessary storage time. Coffee types are really personal; however, we find Arabica beans are more balanced in acidity, bitterness, ss, and fragrance. It’s rich in lipids and sugar but low in caffeine. It’s the most widely used coffee bean.
Water
- Filtering water is always a good option. Impurity and odor have been removed from the water, making it perfect for coffee drinks.
Pre-heating Cup & Portafilter
A warmed cup helps to maintain the coffee’s temperature for the best flavor. Pre-heat the cup by filling it with hot water and place it on the Cup Warming Tray while you prepare for espresso extraction. A warmed portafilter and filter basket can help to reach the extraction temperature quickly, improve the extraction efficiency, and result. Always pre-heat the portafilter and filter basket by rinsing with hot water before use. Do remember to wipe the portafilter and filter basket dry before dosing, as moisture has a negative impact on the even distribution of ground coffee.
Match Filter Basket and Espresso Volume
1 Cup filter basket is usually for 12-14g ground coffee and 40-60ml espresso volume, 2 Cup filter basket is usually for 17-19g ground coffee and 60-80ml espresso volume. 1 Cup and 2 Cup options only act as symbols, not necessarily using one cup or two cups for the shot. You may need to test how much coffee should be put into the filter basket or how long the grinder needs to grind to achieve the correct dosing amount.
Correct the Grind Size
The size of the coffee grind affects the rate water flows through the ground coffee during extraction and the flavor of the espresso. If the grind size is too fine, water flows too slowly during extraction, the coffee will be over-extracted, and the espresso will taste bitter. If the grind size is too coarse, water flows too fast during extraction, the coffee will be under-extracted, and the espresso will taste watery. Adjust the grind size to a greater number if over-extracted and vice versa.
Grind Amount and Tamping
Refer to page 15 for the grinding and tamping guide. Grind Amount: 12-14g for 1 cup basket, 17-19g for 2 cup basket. Adjust the amount after tamping. Tamping: Tamp down the ground coffee firmly with 30-40Lbs of pressure. As a measure of the tamped coffee amount, the top edge of the tamper should be level with the top edge of the filter basket AFTER tamping. Adjust amount: Check the tamped coffee level, remove excess coffee ground, or grind more coffee ground into the portafilter. Tamp again.
Prepare for Extraction
A steady extraction temperature is key to perfect espresso. Purge the Group Head with hot water to heat the components before placing the portafilter. Press the EXTRACTION Button to release hot water through the extraction system. Wait till the flow automatically stops, or press the button again to manually stop the flow.
Place the Portafilter
Place the portafilter under the Group Head with the handle aligned with the INSERT sign. Raise the portafilter straight to fit into the Group Head and rotate the handle to the right until resistance is felt. The handle should be perpendicular to the control panel when the portafilter is in position. Extra force may be needed to turn the portafilter in the Group Head for the first few uses.
Espresso Extraction
- Place your espresso cup beneath the GEVI ECMF0 Espresso Coffee Machine portafilter, making sure it’s in place to catch all the water flows.
- BeeBe is extracting the reference page 16 for the operation guide.
- Monitor the pressure gauge to determine the validity of the outcome. See ‘Extracting Pressure Gauge’ on page 17.
- Make adjustments to grind size, ground coffee amount, and tamping pressure to optimize the extraction result, adjust one factor at a time, until the favourite combination is found.
The taste of your coffee depends on several factors, the most critical ones are the type of beans, the degree of roast, freshness, the size of grind, the dose amount, tamping pressure, extracting pressure, extracting method, and water temperature. Test by adjusting these factors one at a time to find your combination.
Milk Frothing
The unit is equipped with a daal boiler that works independently for espresso extraction and milk frothing. That means you can do both at the same time, avoid losing the right temperature for either espresso or milk frothing. Basically, Milk Frothing involves two parts. The first part is introducing air into milk to create microfoam. The second one is swirling the milk to make large bubbles disappear and make the milk smooth. There should be no clear boundary between the two parts; they should blend and switch as needed.
- Milk that contains a higher amount of fats and protein, such as whole milk, will produce a richer and thicker texture.
- Always use fresh cold milk.
- Fill the milk pitcher to the bottom of “the V”, the beginning of the spout.
- Point the steam wand towards the drip tray, rotate the GEVI ECMF0 Espresso Coffee Machine the Steam/Hot Water Dial to ‘STEAM’ position. Some water may purge from the steam wand before steady steam is released consistently.
- When steady steam is released consistently, rotate the Steam/Hot Water Dial to the ‘STANDBY’ position. This will pause the streaming and avoid splashing during insertion.
- Insert the steam wand tip 2/5”-4/5”(1-2cm) below the milk surface, close to the 3 o’clock (right side) or 9 o’clock (left side) position, and keep a 1/2” distance from the pitcher wall. Then quickly rotate the Steam/Hot Water Dial to the ‘STEAM’ position. Time gap between ‘STANDBY’ position (Pause steam) and ‘STEAM’ position again should be minimized to no more than 8 seconds.
- Maintain the position of the milk pitcher till the milk swirls steadily.
